iStock_crockpotAs someone who grew up with a mom who made all meals from scratch, the idea of using a Crock-Pot to cook anything was a bit foreign.

We’d heard about the wonders of the Crock, but it wasn’t a cooking tool we saw in our household, and always kind of saw it as the lazy way to make food. Remember, this was all before we actually HAD to make our own food, so it was pretty easy to be judgmental on the topic.

Oh how silly we were. It wasn’t until after college, when eating campus pizza and fast food every night was no longer appealing, that we truly realized the wonders of the Crock-Pot.

Working a full time job and cooking a healthy meal every night turned out to be more difficult than we’d anticipated and we finally broke down and gave it a shot. We are VERY happy we did this.

Crock-pot cooking allows you to use fresh ingredients and it’s a one step process most of the time (dump everything in pot: done!) except of course the prep of vegetables you may be including.

Here is the tough part, although it’s becoming easier with the influx of healthy eating blogs, a lot of the recipes in the past have included a lot of overly salty, often canned, and many times not at all fresh ingredients. We’re not here to bag on it, we’re just saying, trying to add fresh food into your diet is always great.

To get you started, here are some suggested Crock-Pot recipes, some of which we’ve already tried and loved, and others that have been suggested to us by friends!

Slow Cooked Short Ribs with Apricots And Wine

Beef Stew

Chicken Fajitas

Spinach and Mushroom Lasagna

Vegetarian Chili (and more!)

What recipes have you tried? We always love new suggestions!

  1. Thank you for HEALTHY crock pot recipes! One of my main gripes with most that I find on the internet fall into the over salted category, and use of too much canned goods, especially “cream of whatever” soup.
