Delicious borscht. Sounds like a contradictions of terms. I know there are many (eastern Europeans, all the Russians) who love it, but no matter which way you puree it…not a favorite. But beets are highly nutritious and cardiovascular health friendly root vegetables. They are mineral rich and potentially help fight cancer with their high concentration of antioxidants compound betalain*, lower cholesterol, and might even have ant-aging effects. No arguments here. They’re also full of sugar, so don’t go overboard.
There are so many delectable things to do with beets.
Roasted Beets
One of the more unfortunate aspects of beets is the boiling and peeling. It’s not difficult, but time consuming, and you are sure to stain your fingers pink. Oven-fresh roasted beets are a great alternative. It’s the easiest way to cook beets. The skins will slip right off, and roasting brings out their inherent sweetness. Coat with olive oil, sprinkle salt and roast between 1 to 2 hours. Serve them on their own, or in a simple micro green salad with goat cheese. Save the leftovers.
Grated Beets
You’ve seen this done with Brussels sprouts a ton. Peel and grate your boiled beet. Toss them with light citrus, some chives, olive oil, sea salt and pepper. It’s a simple snack, or a side dish.
Beets for Dessert
It sounds bizarre, but noted above for their natural sweetness, you can actually use a beet puree the same as you would pumpkin. And their deep red color gives the dessert and extra vibrancy. La Tartine Gourmande concocted Beet Brownies. Don’t let the name throw you off.
