With Thanksgiving rounding the bend faster than most of us anticipated, there is going to be plenty of turkey talk in the next month: how to baste it, dress it, stuff it, and most importantly what to do with it the day after our indulgent feasting.  But all this Thanksgiving prep can be a little exhausting, so in the interim, why not test out another turkey favorite- the mini turkey slider!

Plus turkey burgers have fewer calories, less fat, and a bit more protein than beef burgers.  In lieu of holiday calorie counting (or complete abandon), every little bit helps.  Choosing extra lean meat also helps.

Plus little sliders are a great addition to any gathering, cocktail party, or event you might be planning.  Bite sized foods with no flatware and little prep required.

Turkey Sliders with White Cheddar

Makes 8 sliders

Ingredients:

1 pound ground turkey

1/3 cup plain bread crumbs

1 large egg

2 tablespoons mayonnaise
or spicy mustard

2 tablespoons grated white onion

1 teaspoon Worcestershire sauce

1 teaspoon kosher salt

½ teaspoon ground black pepper

White cheddar cheese, cut into 4-inch squares

Small Red onion

Arugula, rinsed and dried

Small rolls (Trader Joes has great mini burger buns)

Instructions:

In a large bowl, mix the turkey, onion, breadcrumbs, egg, Worcestershire sauce, salt and pepper together with your hands.

Divide the meat into small patties about 4 inches in diameter.

Heat 1 tablespoon of olive oil in a large grill pan over medium heat.

Grill for about 4 minutes per side or until done.

Serve with squares of white cheddar, slices of red onion and arugula on small rolls.  Spread with either mayo or a spicy mustard.

If you want to grill your onions, they add an extra layer of flavor to any burger.
