I can smell a new dessert trend arriving, and it goes by the name of the “Whoopie Pie.” Maybe I have lived in a hole my whole life or maybe my mom deprived me of this confectioners delight, but I am just now hearing about these- and they are all over the place!
A Whoopie Pie is a baked good made of two round mound-shaped pieces of chocolate cake, sometimes pumpkin cake, with a sweet, creamy frosting sandwiched between them- um YES PLEASE!
I have seen these delights in the gourmet bakeries, magazines, food trucks, etc. and it got the best of me this weekend when I just had to make them. I found my recipe on The Food Network, click here to get it. For a fun Red Velvet variation, check out this one!
Fun fact: According to food historians, Amish women would bake these (known as hucklebucks at the time) and put them in farmers’ lunchboxes. When farmers would find these treats in their lunch, they would shout “Whoopie!”
