I have to strategically hide vegetables in the food I cook and mostly because of myself. I have never been a healthy consumer of the food type that is most beneficial to me, and it has taken some real fooling around in the kitchen to figure out a way to trick myself into eating the vitamins and vegetables I need.
I love carbohydrates, and I can hide them really well in dishes like chicken fried rice. In fact, my favorite recipe incorporates Uncle Ben’s Whole Grain Brown Rice, making it healthier than you can ever have imagined. I try to cook equal parts vegetables and rice. For example, if I am going to have two cups of Uncle Ben’s rice when it is finished cooking, I want to have two full cups of cooked vegetables mixed in. To make the fried rice, cook Uncle Ben’s rice according to the directions on the package. I prefer to use vegetables like broccoli, yellow squash, spinach, mushrooms, and zucchini in mine, but you can really tailor it to your likes. If you are a big fan of carrots, throw those in too. If you hate zucchini, leave it out.
The more colors you can incorporate, the healthier the dish will be overall because it will be loaded with all kinds of vitamins. Lightly sauté the vegetables you chose in a small amount of grape seed oil until cooked in a big frying pan or wok. Once the vegetables and rice are done, throw two eggbeater type eggs into the frying pan. Using eggbeaters will be an even greater addition to the dish because it is going to be extremely low in cholesterol and fat. Once the eggs are cooked, mix the rice into the big pan and add in some low-sodium soy sauce.
