2012 seems to be speeding by. I feel like I have barely had time to stop and smell the roses, let alone relax with a long Sunday Brunch. And I think this weekend it is time. So here are two recipes for brunch musts (aside from mimosas), that I learned from my mom. The ingredients are incredibly basic. Top them with your favorite spreads- butter, jam, Nutella? Sunday is cheat day after all.
Dutch Babies
Super easy to make. It’s just a pancake in the oven.
Ingredients
4 eggs
1 tablespoon sugar
1/2 teaspoon salt
2/3 cup flour, sifted
2/3 cup milk
2 tablespoons soft butter
Instructions
Heat oven to 400°F.
Butter two 9-inch cake pans well.
In mixing bowl whisk eggs.
Add flour to eggs a little at a time, whisking after each addition. You wan the batter smooth- no lumps!
Add milk in two parts, beating lightly after each addition.
Lightly beat in 2 tablespoons of melted butter and the salt.
Pour half of the batter into each pie pan.
Bake at 400° F for 10 minutes. Decrease heat to 350° and bake an additional 5 minutes.
Taste best when served immediately.
Popovers
I loved these Sunday mornings. The hollow middle is perfect for spooning marmalade into. And the batter is similar to Yorkshire Pudding.
Ingredients
2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt
Directions
Preheat oven to 450° F. Grease and flour six 6-ounce custard cups.
In a medium bowl whisk eggs.
Beat in flour, milk and salt until smooth, but be cautious not to overbeat.
Fill custard cups 1/2 full.
Bake at 450° F for 20 minutes. Decrease heat to 350° F and bake for an additional 20 minutes.
Remove from cups and serve immediately.
