What kid doesn’t love pizza?  I know that mine do, heck I love me a nice slice of pizza pie.  I’m definitely not a huge fan of delivery and prefer to make my own, but the other night I found myself without enough flour to get the job done.  It was a tragedy to say the least.  I promised the kids some sort of pizza, and was finding it hard to make good on that promise.  With a stroke of luck and perhaps some genius too, we decided to use tortillas.  My daughter very cleverly dubbed them pizza-dillas. 

The process was simple.  We took our flour tortillas and spread about one tablespoon of pizza sauce on them.  Then I let the kids do their thing, and choose their own toppings and spread the cheese on. My kids always eat better if they get the opportunity to choose some ingredients, and pizza toppings are a great way to sneak in some veggies.  After the cheese was carefully arranged on each pizza-dilla, I stuck them under the broiler for just a few minutes.  Roughly 4, no more than six.  The result was a crunchy flatbread type of pizza.  We served them with some fresh strawberries and a small side salad for extra healthy goodness.  All in all it was a 10 minute weeknight dinner that satisfied all of the family at the same time.

What you will need:

Flour tortillas – at least one for each person. 

Pizza sauce – one tablespoon per tortilla

Mozzarella Cheese – about a half ounce per pizza

Various toppings, bell peppers, onions, meat, pepperonis, pineapples, etc – to taste

Directions:

Broil until the cheese is bubbly and just starting to turn brown.  Allow to cool for a minute or two before serving.
