Curried Pumpkin Seeds

Ingredients:

1 egg white

2 teaspoon curry powder

scant 1/2 teaspoon fine grained sea salt

1 cup fresh pumpkin seeds

Preparation:

Preheat oven to 375.

In a medium-sized bowl whisk together the egg white, curry powder and salt. Add the pumpkin seeds and toss well. Use a strainer to drain off any excess egg white and scatter the seeds on a baking sheet. Bake for about 12 minutes or until seeds are golden brown. After baking, sprinkle the seeds with a bit more curry powder. Taste and season with salt as desired.

Sugar and Spice Seeds

Ingredients:

1 cup pumpkin seeds

1 tablespoon melted butter or vegetable oil

1 tablespoon granulated sugar, or more, to taste

1/2 to 1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/8 teaspoon allspice

Preparation:

Preheat oven to 300.

Toss rinsed seeds with the butter, sugar, and spices. Spread coated seeds in a shallow baking sheet. Bake for about 45 to 60 minutes or until nicely browned and crunchy, occasionally turning the seeds with a spatula.
