We seriously get into Halloween around here. Our house is the one with all of the decorations, and flashing purple lights. My kids count down to Halloween, and not just for the candy, but I think the candy is a huge motivator. One of our favorite Halloween traditions include having ghoul pancakes for breakfast. This is the absolute easiest thing in the world to make. Any pancake recipe will work, buy I will include mine anyway. I like to put my batter into a condiment bottle, but its just as easy to use a ladle. Get your pan, or griddle nice and hot, just like you would to make regular pancakes. Then using your ladle, or bottles, pour the batter into ghoul shapes. I usually start with the head, do droopy arms, and then taper off at the bottom. Once you get a ghost shape onto the pan, grab two chocolate chips and place them where the eyes of the ghoul should be. Flip the pancake just like you would, when bubbles form and the edges are lifting. The best part is that your shapes don’t have to be perfect. Pretty much anything goes. Trust me, I have given my kids some crazy shapes that they swear are ghosts!

Here is my go to pancake recipe, adapted from Alton Brown

2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
2 teaspoons sugar
2 eggs, separated
2 cups buttermilk
4 tablespoons unsalted butter, melted

Mix together the dry ingredients, and set aside.
Whisk together the egg whites and the buttermilk. In another bowl, whisk together the yolks and melted butter. Combine the buttermilk mixture with the butter mixture. Whisk until very well combined. Add the dry ingredients. Mix until combined, but don’t be fussy about the lumps. Cook as usual.
