I’m a busy mom, which is slightly silly to say.  All moms are busy.  It’s just the way it is.  I’m always looking for recipes that I can use to save some time throughout the day with.  Something that I can prep early and easily, or even better throw in the oven or Old Faithful (otherwise known as my slow cooker) and forget it.  While I perused tasteofhome.com for the next recipe for me to try I came across “Slow Cooker Lasagna.”  Pasta, sauce, cheese.  Win, win, win.  The recipe called for a jar of marinara with meat sauce.  Usually when I make spaghetti I double my meat sauce and freeze half of it so I just used that instead.  I also did not have any lasagna noodles so I used penne instead.  It worked beautiful.  Here is what you do.

Your ingredients are easy:

1 Jar of Pasta sauce (or a homemade equivalent)

1 Bag (2 cups) of Mozzarella Cheese

1 Box of Penne (Or your favorite pasta)

Put a bit of sauce on the bottom of your slow cooker.  Pour a layer of noodles on top.  Top that with a handful or so of mozzarella cheese.  Repeat that until you run out of everything.  Put the lid on, set the slow cooker to low then go about your business for about six hours.  No stirring or fussing necessary.

If your slow cooker bowl is oven safe,  you could put this in the oven on broil for about 10 minutes to get the top layer of cheese good and brown and bubbly.  Yum.
