Zucchini also happens to taste pretty amazing and is a great candidate for healthy sides to go with your meals.

Zucchini rolls are a really simple, and honestly pretty, appetizer or side dish that’s easy to make. It just takes 3 zucchinis (sliced), herbed goat cheese, Kalamata olives, olive oil, salt, and pepper. Slice the zucchini, drizzle olive oil, salt, and pepper on the pieces, and then grill them until they are cooked but not mushy. While you’re grilling the zucchini slices, mix the goat cheese with sliced Kalamata olives. Let the zucchini cool, then spoon the mixture into the zucchini slice and roll up.

Minty marinated zucchini is another dish that I enjoy, especially since I have tons of mint growing in my backyard. I simply heat some olive oil in a skillet, and then I add 2 cloves of minced garlic and three sliced zucchini. I cook it for three to four minutes until it’s brown. I remove it from the heat and add in 1/3 cup of distilled vinegar, two cups of chopped mint, and some salt and pepper to taste. I top it off with a little olive oil and store it in the fridge.
