Frozen is OK. Thinking about participating in Meatless Mondays but don’t know what you’d eat? Fret not, there are tons of vegetarian recipes that are tasty, healthy, and filling. Meatless Mondays can become a fun tradition in your household as you brainstorm twists on classic meat dishes and explore new vegetarian ones. Here are just a few to get you started:

Black Bean Quesadillas – These are perfect for a Monday. Why? They’re quick, easy, and use ingredients you probably already have on hand.  Because, really, who wants to do more work on a Monday than they have to? And the variations on this recipe are endless – add some avocado, sour cream, guacamole or peppers. Go wild!

Smoky Jalapeno Grilled Cheese with Tomatillos – Sure you could go the regular grilled cheese route and still call it a Meatless Monday meal, but how boring. Kick it up a notch with the addition of spicy jalapenos and zesty peppers.

Red Curry With Vegetables – Hearty, warm, and flavorful, this red curry packs a punch for the taste buds and the body with all of the veggies it’s chockful of.

Stuffed Portabello Mushrooms With Tomatoes and Goat Cheese – Mmmm, tangy goat cheese and tomatoes stuffed into a “meaty” portabello mushroom has all the makings of a winning meatless dish.

Vegetarian Chili – Chili is super easy to make, comforting, warm, and hearty. The beans pack a huge protein punch, and you can customize the spices to your liking. If you’re really short on time, start this the morning of in the slow-cooker and come home to an already-made dinner. Toppings such as cheese, sour cream, scallions, and tortilla strips will really take this dish to the next level.

Any pasta dish really – Earthy mushrooms or eggplant can always be substituted in for meat, and you can toss virtually any vegetable under the kitchen sink with this versatile carb. A little garlic, a little parm, and a glass of wine, and you’re good to go!

Mushroom and Scallion Frittata – Frittatas aren’t just for breakfast anymore! This delicious version is a perfect Meatless Monday entree. Pair it with a nice spring salad for a perfectly balanced meal.
